elegant restaurant will feature a highly creative Japanese and French menu. New
employees will be exposed to modern cooking techniques and exotic ingredients

CHEF
DE PARTIE (CDP)
Job Description:
The
CDP is responsible for running an assigned production area of the kitchen and
assists the Chef de Cuisine and Sous Chef in all aspects of daily operation.
He/she will open and close an area of the kitchen, while managing the
production, cooking, and presentation of culinary foods produced by team
members within their assigned section. The CDP will receive intense training
for their station and will be expected to train new team members according to
standardized recipes and companies SOP’s. General responsibilities include
ordering, receiving, and proper storage of products according to their assigned
area. He/she will be responsible for maintaining a high level of food safety
standards.
Job Qualification:

Min.
5 years experience in restaurant as Demi Chef, or higher
·
Possesses
a Culinary Arts diploma
·
Have
cooking experience in Japanese / French restaurant(s)
·
Experience
in Baking and Pastry a plus
·
Able
to prepare and cook a variety of food
·
Good
with English both oral and written
·
Strong
food safety skills
·
Can
work independently and with a team

PASTRY
COOK
Job Description:
The
Cook is responsible for the preparation, cooking, and presentation of all
culinary foods at their assigned station in the kitchen. They are expected to
prepare all culinary foods according to standardized recipes and the companies
SOP’s. The cook must maintain a clean and organized station at all times. They
will be responsible for maintaining inventory for cooking ingredients, prepared
items, and any kitchen items. He/she will be responsible for providing
knowledge and training to other Cooks, Commis and Stewards.

STEWARD
(STW)
Job Description:
The
Steward is responsible for keeping the kitchen clean and organized during
operational hours. General responsibilities include cleaning dishes, pots,
pans, utensils, and glassware, as well as sweeping and moping floors
periodically throughout the day. The Steward will also be responsible for the
removal of trash from the kitchen, cleaning walls, refrigeration, freezer units
and/or any other assignment provided by the Chef de Cuisine or Sous Chef. In
addition, the Steward will occasionally work with Commis in the preparation of
food.

COOKS
HELPER
Job Description:
The
Commis is responsible for assisting the cooks in the preparation of ingredients
needed for cooking. They are responsible for receiving and putting away food
orders and organizing refrigeration, freezer, and dry storage spaces according
to the companies SOP’s. The Commis will wash, peel, and cut vegetables and
fruits, and occasionally will cut and portion meat and seafood items. The
Commis will be expected to cook and/or prepare some recipes for cooks. The
Commis must maintain a clean and organized station at all times. During
service, the Commis will assist the Chef de Cuisine with plating foods on the
pass.
